A BIT OF HISTORY:
One of the oldest symbols of pre-Lenten celebrations was the boeuf gras, the last meat consumed before the Lenten fast begins. Ancient Druids also paraded an ox in religous rituals before sacrificing it. In several cities in France, Fetes des Boeufs Gras are celebrated as it has been since ancient times in the Old World. With butchers and bakers creating a feast afterwards. This decorated fatted ox symbol is our modern carnival's wonderful and mysterious link to the origins of our celebrations. In Mobile, Alabama the tradition of the French boeuf gras celebration was brought into their earliest carnival celebrations as well as the creation of a Boeuf Gras Society decades prior to the first appearance of a live boeuf gras in the Comus parade in New Orleans in the 1800s. Then REX started parading with a live bull dressed festively in ribbons and a garland of flowers walking behind the king who rode on horseback then. In today's carnival celebrations the papier mache fatted bull wears a flower garland like bulls led to the sacrifice long ago but now rides atop a float on Mardi Gras Day in the REX parade. This pure white bull is flanked by riders, many who are past kings of carnival, also wearing white costumes as a nod to the ancient butchers and bakers of European celebrations past.
